This year we really pulled out all the stops and created a couple of Christmas cocktails which we have been drinking throughout the festive period. I have been asked about these so often since posting the photos on Instagram so today I though I would share the recipes with you.
Mixed Berry Bellini
The genius of this cocktail is that the puree is prepared in advance meaning all you have to do on the day is open a bottle of fizz and enjoy.
500g frozen berries
200g golden caster sugar
2 star anise
2 cinamon sticks
2 drops of vanilla essence
2 teaspoons of all spice.
3 shots of cointreau
It is SIMPLE. Just add all of the ingredients to a pan, bring to the boil and simmer for as long as you can be bothered. I left mine for about 2 hours. The beauty of this was that my whole house smelled delicious afterwards. When you are ready, push the liquid through a sieve, discarding the seeds, sticks etc that are left.
Chill the liquid then keep in fridge.
When you want to drink, half fill a champagne glass with the puree and top with champagne.
We garnished with a cherry but you could use whatever you liked.
For me this was the perfect pre-dinner cocktail – light, bubbly and sooooo delicious.
After Eight Dessert Martini
Creme de Menthe
Vanilla Vodka (Plain vodka would do too)
Add 4 shots of baileys, 1 shot vodka and 1 shot of creme de menthe to a shaker with lots of crushed ice.
Dance round the kitchen like a loony for a few minutes.
Pour into martini glasses and garnish with a super cute baby candy cane (ours came from Amazon).
Relax and enjoy.
